Grapes harvested at full maturity, destemmed, and fermented separately by grape variety, following the traditional method with one week maceration under a controlled temperature control of under 28°C. After the malolactic fermentation, the different tanks are blended according to analytic and organoleptic tests.
Tasting
Nice lively and warm red color, with light patina. Powerful and complex smell with spicy prevalence. In mouth, soft start, then pleasant tannins bring a good structure with well developed secondary aromas.
Sommelier's advice
This wine is excellent young. Aged for 3 or 4 years, the aromas will be more intense with notes of liquorice, old leather and spices. Recommended for meats in sauce, game and cheese.
